Weeknight BBQ (ONly 3 ingredients)!!

Happy Monday!! I don’t know about y’all, but by the end of the day on Mondays, I am seriously dragging. There’s not enough coffee to get me through the day, and the last thing I want to think about is cooking dinner.
On my way home tonight, I stopped at Whole Foods to grab some groceries. I am a sucker for easy meals. The less ingredients and prep time, the better. I am so lazy when it comes to cooking, but I always want a good meal. The struggle is so real. I also love Kielbasa and any kind of smoked sausage. It’s so easy to make. All you have to do is literally throw it in the oven and voila. Magic and delicious. Tonight’s dinner cost me about $10 and it fed 2 people plus leftovers. Recipe below 🙂 BBQ Kielbasa + Veggies Ingredients: Kielbasa of your choice (I prefer smoked or sweet hickory flavors) – about $5-6 – one bag of mini potatoes (only $2.99 @ the store tonight) – 2-3 crowns of broccoli ($1 per pound – so cheap!!) – any desired seasonings First, I toss the potatoes in olive oil, salt, and minced garlic. Toss that on a pan and bake @ 425 for 15 minutes. While that is baking, cut the broccoli and season to taste. Steam either in the microwave or via stovetop. Cut kielbasa into chunks and coat with your BBQ sauce of choice (Sweet Baby Rays always, amirite). Once the potatoes are done, add the broccoli and kielbasa to the pan, and cook for an additional 5 to 7 minutes. Season with salt and pepper to taste.
